We are a group of passionate family owners whose retirement dream was to build a boutique hotel around a vineyard. We made our vision a reality, here in Valle de Guadalupe. Upon our first visit, we fell in love with the climate, people, landscape, and most of all, the high quality of wines unique to this region. Mexican hospitality has always been at the core of our enotouristic project, inspired by our love of wine, delicious food, and most importantly, shared moments with loved ones. We were fortunate enough to come across Dolores Lopez Lira and Jorge Luis Martinez, respected hoteliers in the Riviera Maya. They not only believed in our vision but shared the same passion for the project as we did, and their greatest piece of advice was to dream big. And so, we did. Together.

THE VINEYARD

El Cielo features 92 hectares of vineyards that grow 15 different types of grapes. There are 32 hectares in the Guadalupe Valley, as well as more than 30 hectares in San Jacinto and 30 in Ojos Negros. This equals 3,850 plants per hectare, which totals in 354,000 vines. The moist, clay-filled land is irrigated with low-sodium, high-quality water from our own wells. We also have fruit, organic vegetables, aromatic herbs, and flower gardens, as well as 2,500 olive trees.

THE VARIETALS

We have planted 15 varieties of grape seeds from around the world. Our varietals include traditional French wines - Cabernet Sauvignon, Cabernet Franc, Pinot Noir, Merlot, Malbec, Chardonnay, Sauvignon Blanc and Syrah. Sultry Spanish wines - Tempranillo and Grenache. Bold Italian wines - Nebbiolo - the wine typically associated with Piedmont, Italy and now Baja California, Mexico; Sangiovese and Primitivo (the original Zinfandel). Modern American wine - Zinfandel

THE WINERY

Our winery was constructed with energy efficiency in mind. This is why the cellar is below ground, the roof and walls are insulated, the ceilings are tiled, and we have LED lighting and plasma motion detectors with automated systems. In 2015, our winery was recognized by the government of Ensenada as the 1st Eco-Responsible Company.

ORGANIC GARDENING

We seek high quality in our products and seasoning for our dishes. This led us to take advantage of our own fields and plant an organic garden, featuring dozens of variations of vegetables, including peppers, cabbage, cilantro, celery, various types of lettuce, as well as figs, limes, and oranges. We’ve went as far as planting our produce all around the property, so don’t be surprised when you see them growing right next to your villa.

THE TANKS

The winemaking process is facilitated by gravity within our equipment for grape selection and boasts state-of-the-art pressing. We have 29 tronco-conical fermentation tanks made of stainless steel, imported from Spain and Italy. This shape gives more skin contact for a long and slow extraction.

THE BARRELS

For the process of aging, we use the finest barrels made of American, European and French oak – for softer, smoother, and more complex wines.
